I have already created various multiple choice questions. Can I merge them to form a quiz? Or will I have to start all over and type in the multiple choice questions into the “quiz” format? Thanks a lot for any advice!

You can change one of the multiple polls to quiz, but it will not allow you to merge them.
I would advise to open this event on two tabs, create quiz on one, and copy all the questions from one tab to the other, that would be the fastest solution.
